This is the first time I have ever used my china dishes. Yeah.
I'm not posting this recipe yet cause I want to perfect it. It needs to be just a bit sweeter but it is super protein rich, tastes great and has healthy ingredients. Here is the jist...

He is now saying a lot more words but Im not sure yet if he is just mimicking sounds or really knows what he is saying.
  • HE DOES SIGN LANGUAGE FOR: BOOK, ALL DONE, MORE, PLEASE, FOOD, MILK, DIAPER, NAP, YES AND HE SHAKES HIS HEAD FOR "NO" :)

Having fun

couscous stuffed bell peppers

I find all my recipes on pinterest these days:) click (here ) to find the link.

Im not so sure this would be perfect with children but for Seth and I  we LOVED it.
Seth actually made it because  he had wanted it for a while and for one reason or another I hadn't made it happen. He is so good to me:) We love meals that make us feel good and this one not only tasted great but felt great!!!!!!

Couscous and Feta-Stuffed Peppers
Adapted from Epicurious
Vegetable-oil cooking spray
1 1/4 cups fat-free chicken or vegetable broth
2/3 cup couscous
4 extra-large or 5 large bell peppers, mixed colors
2 tsp olive oil
1/2 cup chopped onion
6 oz zucchini, quartered lengthwise then sliced across thinly
6 oz yellow squash, quartered lengthwise then sliced across thinly
1/2 tsp fennel seeds
1/2 tsp dried oregano
1/2 tsp salt
1 cup cherry tomatoes, cut in half
15 oz canned chickpeas, drained and rinsed
4 oz crumbled feta cheese (about 1 cup)
3 tablespoons tomato paste

Cook the couscous according to directions on the box.
Cut the stems and top half inch off the bell peppers and scoop out the seeds and membranes.
Place peppers upright in a baking dish and roast them for 15 minutes or so, until they soften, then remove them from the oven until the filling is ready.
Heat oil in a nonstick skillet. Add onion, zucchini, yellow squash, fennel seeds, oregano, and salt. Cook, stirring frequently, for 5 minutes or until vegetables are softened.
Remove from heat and stir in the tomatoes, chickpeas and tomato paste. Using a fork, scrape the couscous into the skillet and toss with the vegetables. Stir in the crumbled feta. Fill peppers with the couscous mixture.
 Bake 15 minutes. Serve immediately.

magnetic makeup board

Cindy and I first got this idea from Pinterest. You can find the link if you click (here). There are alot of other fun ideas on this sight.
Cindy made her board first and I wish I had a picture but I don't. So here is mine:)
The top two cases in the corner have lids that open and close, (compare top picture with this one)
I Velcroed the brushes using my sister Julie's idea back when we did face painting:)
I put my cleaning solution for my brushes in this squirt bottle to remind me to clean them:)
